For Tofu recipe you will need,
1 package of Organic extra firm tofu
Organic soy sauce
3 Tablespoons of Organic brown sugar
Drain the water out of the tofu package and pat down the tofu with a paper towel. Wrap the tofu in a couple of sheets of paper towels and set it on a plate. Place a heavy (preferably ceramic) plate on top, sandwiching the tofu between the two plates. Place a object, heavy enough to weigh the plate down (but not squish), to compress the tofu which will release its water content. Let sit for 20 minutes.
After 20 minutes, unwrap the tofu and divide it in half, length wise, and then cut each slice in half. In a container, place the tofu evenly on the bottom and pour organic soy sauce, mixed with 3 tablespoons of organic brown sugar over the tofu. Let the tofu marinate for 5 minutes.
Heat a large pan greased with organic coconut oil so the tofu won’t stick to the bottom. Cook the tofu for 1-2 minutes on each side until golden and crispy. Serve with Fried Rice.
For Fried Rice recipe you will need,
3 cups of white rice
2 cups of frozen peas
2 medium carrots
1 1/2 cups of soy sauce
1 teaspoon of sesame oil
1 1/2 teaspoon of salt
1/4 teaspoon of pepper
Bring 6 cups of water to a boil add the rice, turn burner down to low and put the lid on, let it simmer for 20 minutes. Peel and dice two carrots, in a small pot add frozen peas and carrots, cover with just enough water over the vegetables, cook until soft. combine rice and vegetables in a large skillet, scramble eggs with coconut oil and add to the rice and vegetables. Stir in soy sauce, sesame oil, salt and pepper.
